Summary:

Australia has signed up to the UN Sustainable Development Goal 12.3 – to reduce Australia’s food waste by half by 2030. To ensure this goal is met, every sector across the food supply chain from farm to fork needs to make improvements in how they purchase, prepare, use and dispose of food.

One sector that is particularly challenging is the Institutions sector. Here, in hospitals and aged care, food is a key component of the care provided to patients and residents.

Our project is to scope a food waste reduction sector action plan for the Institutions sector, commencing with developing a clear picture of the sector overall, then drilling down to food waste pathways. We will work with stakeholders in the sector and build on our knowledge to develop several case studies of how high-performing care providers are reducing food waste in their organisations.
